The West Village’s hip new Raviolo doesn’t quite rise to the pretensions of those heady post-Millennium days. But dashing and dapper chef Paolo Meregalli (of MePa’s Mulino a Vino) has cleverly reimagined the Italian dining experience by giving it a groovy “dim sum” presentation. This means offering classics like carbonara, cacio e pepe and vitello tonnato in one- or two-bite pieces – and bringing together two unshakeable dining trends.

An Italian restaurant with a dim sum theme opens today. A new West Village Italian restaurant called Raviolo makes its debut on Wednesday at 57 7th Avenue South, near Bleecker Street. It’s essentially a typical pasta restaurant, but owner Paolo Meregalli has opted to divide the menu into sections and call it “Italian dim sum.”

Mulino a Vino’s owner is behind this new West Village restaurant, which officially opens Wednesday. The menu is dim sum-inspired; Italian dishes such as lasagna and eggplant parmigiana get the dumpling treatment, with most plates $8 for four pieces.

Paolo Meregalli, from Mulino a Vino, will bring “Italian Dim Sum” (raviolo) to the West Village. Chef Massimiliano Eandi will offer bite-size pasta dumplings filled with meat, fish and vegetarian ingredients, sculpted into different shapes and colors. Anticipate combinations like Amatriciana sauce in housemade tomato pasta topped with dried tomatoes coated in a cacio e pepe sauce. For beverages, the concept will feature a Bubbles Bar and Gin & Tonic Bar.
